Origin and Quality of Our Food
Regional origin, fair conditions and gentle processing – these are not just empty phrases for us, but the foundation of a breakfast that not only tastes good but also feels right. Here is an overview of our most important suppliers and standards:
Dairy Products
We source most of our dairy products from Pinzgau Milch in Maishofen. This cooperative processes milk from farms in the Pinzgau region and nearby Tyrol. The Almsenner Sennkäse we offer is of organic quality, as are other seasonal products. Should a product not come from the region, it is sourced from within Austria.
Eggs
The eggs we use come from certified organic farming. You can easily verify this: the stamp on the egg begins with a “0” – which stands for organic quality. If our suppliers are temporarily unable to deliver organic eggs, we always use free-range eggs instead. Their stamp starts with a “1”.
Meat Products
Our breakfast buffet features meat products from Metzgerei Schultes in Zell am See – a traditional local butcher known for high quality. The meat is mainly sourced from our region or the neighbouring federal state of Tyrol.
Coffee, Cocoa & Fairtrade
Our filter coffee comes from Tridor Roastery in Zell am See. For our automatic coffee machines, we use beans from the Schärf Family Roastery in Saalfelden, which roasts gently using the single-origin method. Schärf coffee is also used in our portafilter machine: the variety “Salzburger – Indie Pop” is certified organic and Fairtrade. Our cocoa is also Fairtrade certified.
Tea
We use only Teekanne products in proven catering quality. In addition to black teas, we regularly offer a changing selection of herbal and fruit teas – always with at least two organic varieties.
Fruit
Our fruit always comes from Austrian cultivation. When available, we prefer to use products of organic quality.
