Origin and Quality of our Food
Regional origin, fair conditions, and gentle processing – these are not just empty words for us, but the basis for a breakfast that tastes good and gives you a good feeling at the same time. Here is an overview of our most important suppliers and standards:
Dairy Products
We source most of our dairy products from Pinzgau Milch in Maishofen. This cooperative processes milk from farmers in Pinzgau and neighboring Tyrol. The Almsenner Sennkäse in our range is of organic quality – as are other alternating products. If a product does not come from the region, it always comes from Austria.
Eggs
The eggs we use come from controlled organic farming. You can easily see this for yourself: The stamp number on the egg starts with a “0” – which stands for organic quality. If our suppliers are unable to deliver organic quality, we always use free-range eggs. Their stamp number starts with “1”.
Meat Products
Our breakfast buffet offers meat products from the Metzgerei Schultes in Zell am See – a regional traditional company, known for its high quality. The meat is mainly sourced from the region or the neighboring province of Tyrol.
Coffee, Cocoa & Fairtrade
Our filter coffee comes from the Rösterei Tridor in Zell am See. For our fully automatic machines, we use beans from the Rösterei Familie Schärf from Saalfelden, which roast using the single-origin process. Schärf is also used on the portafilter machine: The “Salzburger – Indie Pop” variety is organic and Fairtrade certified. Our cocoa is also Fairtrade-certified.
Tea
We exclusively use Teekanne products in proven gastronomy quality. In addition to black teas, we regularly offer alternating herbal and fruit teas – always with at least two varieties in organic quality.
Fruit
Our fruit always comes from Austrian cultivation. When available, we prefer to use products in organic quality.
